Pancake


resipi dari kak Jun

Ingredients:


2 cups flour
2 1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg lightly beaten
1 1/2 cups freh milk
2 tablespoon melted butter

Method:
  • Sift flour, baking powder and salt.
  • In another bowl, mix egg and milk. Add in flour and mix until incorporated. Add in butter and continue to mix it, until well incorporated.

Crab and Swiss Quiche

Resipi dari fp Zack... I used unsalted butter and LUPE nk letak salt...so the pastry ended up to be tasteless...my own carelessness...:((


Ingredients for the pie crust

250 g all-purpose flour
180 g shortening (i used butter)
20 g white sugar
8 g salt
1/2 egg
60 ml water

How to Make:

  • In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together with a pastry cutter until crumbly.
  • In a small bowl, mix egg with water. Blend into flour mixture. Chill in refrigerator until ready to use.

Ingredients for the filling

2 egg, lightly beaten
120 ml milk
120 ml mayonnaise
3 g cornstarch
225 g imitation crab meat, flaked
160 g shredded Swiss cheese (I used mozzarella)
*fresh dill
*salt & black pepper
*cayenne pepper or 2-3 drops of tobasco
1 unbaked pie crust

How to Make:
  • In a medium bowl, mix together eggs, milk, mayonnaise and cornstarch. Mix in the imitation crab and Swiss cheese. Add the *optional ingredients if you want to give the quiche an extra kick. Pour into pie shell.
  • Bake in preheated oven ( 180 Degress C ) until a knife inserted into center of the quiche comes out clean, about 30 to 40 minutes.
  • Serve warm with your favourite sauce - chilli sauce etc.

Curry Puff

Respi currypuff ambil dekat blog kak Jo..rangupppp sangat..!!! first time buat pakai minyak panas..risau jugak at first..sbb takleh bayang macam mane tindak balas minyak ngn tepung..haha tapi lepas tuh syok plak rase...Alhamdulillah...jadik dan sedap! thanks kak Jo for the recipe!

Bahan:

  • 4 cawan tepung
  • 3/4 cawan minyak-panaskan
  • 3/4 cawan air
  • 1 sk garam
Cara:
  • Masukkan minyak yg betul2 panas dalam tepung, kacau dgn folk, bila sejuk, kacau dgn cari sampai berderai.
  • Masukkan air. Uli sampai rata sebati.
  • Bulat kecil2 sesuai utk size 1 biji karipap. Bila dah siap, tutup dgn plastik tak nak kasi kering.
  • Mengunakan rolling pin, gelek , jgn terlalu nipis.
  • Masukkan inti, klim. Goreng dengan api perlahan.

Marble Cheesecake

Bahan A :
180gm mentega
20gm serbuk koko
1 sudu teh baking powder
120gm tepung naik sendiri (Diayak bersama serbuk koko & baking powder)
170gm gula castor
3 biji telur

1. Pukul butter dan gula hingga kembang. Masukkan telur sebiji demi sebiji, kacau sebati.
2. Masukkan campuran tepung+baking powder+serbuk koko. Gaul rata dan bahagi kepada dua bahagian.

Bahan B:
250gm cream cheese
60gm gula castor
1 biji telur
1 sudu teh esen vanilla

1.Pukul cream cheese sampai kembang.
2.Campurkan gula, telur dan esen vanilla. Pukul lagi sampai kembang dan rata.

Cara-cara :
1. Tuang satu bahagian A ke dalam loyang. Ratakan. Tuang aduanan cream cheese di atasnya dan ratakan.
2. Tuang sebahagian lagi bahan A dan ratakan.
3. Bakar pada suhu 165 darj cel selama 50min-60min ikut oven masing-masing. Seeloknya dibiarkan sejuk dulu sebelum dipotong.

Bahan-bahan ( 10 org )
  • 2 cawan gula pasir
  • 1/2 cawan air
  • 2 ringgit santan pekat (500gm)
  • 5 biji kuning telur
  • 2 camb. tepung kastard (bancuh dgn sedikit air)
  • 1 helai daun pandan

Cara-cara:

  1. Campur gula dan air dlm periuk jadikan gula hangus.
  2. Bila gula dah kekuningan masukkan santan pekat dah kacau sebentar hingga gula larut.
  3. Biarkan sejuk betul2.
  4. Bila santan dan gula hangus tadi dah sejuk, masukkan kuning telur, tepung kastard dan daun pandan. Kacau diatas api yg sederhana hingga mendidih. Bila sejuk kaya ni akan pekat.

Dan ade juge cube respi kaya dari mamafami..actually nih kali kedue cube...dan lepas buat nih pon ade buat lagi sekali untuk dimakan bersama kawan2 di hostel..kirenye dah 3 kali cube dan respi nih mmg sennnntiase hottt gituh...mmg sedap...series...kawan2 saye suke sangat ngn kaya nih...saya pon suke jugak...mase kali ketige buat tuh ade tambah perisa pandan...saya buat full recipes...untuk makan sendirik cume tahan seminggu lebih jer...untuk buat dengan kawan2...errr terus abes..tinggal cenonet jer lagi...best!!!

Bahan-bahan :

6 butir telur
3 cawan santan kelapa
450g gula
3 sudu besar tepung gandum

Kaedah penyediaan :

Pukul telur dengan 150g gula hingga kembang.
Masukkan santan kelapa dan tepung. Kacau rata.
Jadikan gula hangus dengan 300g gula.
Tuangkan gula hangus ke dalam bancuhan telur dan masakkan di atas api yang sederhana sehingga masak.

Bahan A :
2 cawan tepung gandum*
1 camca besar baking powder*
1 camca teh soda bicarbonate*
1/2 camca teh garam (*digaul rata dan ayak)
3/4 cawan chocolate chip

Bahan B :
300 g pisang yang siap dilecek
113 g mentega, dicairkan
1/4 cawan susu segar
2 biji telur gred A
1/2 cawan gula perang (brown sugar)
1 camca teh esen vanilla

Cara membuatnya :-)


  • Panaskan oven pada suhu 175C. Alas muffin mould dengan paper cup. Ketepikan.
  • Satukan bahan2 A dalam satu bekas. Gaul rata. Ketepikan sebentar
  • Satukan semua bahan B dan kacau dengan wisk hingga semua sebati dan bergaul mesra.
  • Tuang ke dalam adunan A dan gaul dengan pantas menggunakan senduk atau spatula. Sudukan 3/4 penuh adunan ke dalam peper cup tadi dan bakar 15 - 20 minit atau hingga masak. Begantung pada keadaan oven masing2.
  • Sejukkan atas jaringan sepenuhnya sebelum dihidangkan. Selamat mencuba!!!

Here are the recipes..

Junior's Sponge Cake Crust

• 1/4 cup sifted cake flour
• 1/2 teaspoon baking powder
• Pinch of salt
• 2 extra-large eggs, separated (i used 3 medium sized eggs)
• 1/4 cup sugar
• 1/2 teaspoon pure vanilla extract
• 2 tablespoons unsalted butter, melted (i used canola oil)
• 1/4 teaspoon cream of tartar

Chesecake

• 4 8-ounce packages cream cheese (use only full fat), at room temperature (i used 750 gms)
• 1 2/3 cups sugar
• 1/4 cup cornstarch
• 1 tablespoon pure vanilla extract
• 2 extra-large eggs (4 medium sized eggs)
• 3/4 cup heavy or whipping cream

Junior's Sponge Cake Crust


1. Preheat the oven to 350°F and generously butter the bottom and sides of a 8-inch springform pan .Wrap the outside with aluminum foil, covering the bottom and extending all the way up the sides.
2. In a small bowl, sift the flour, baking powder, and salt together.
3. Beat the egg yolks in a large bowl with an electric mixer on high for 3 minutes. With the mixer running, slowly add 2 tablespoons of the sugar and beat until thick light yellow ribbons form, about 5 minutes more. Beat in the extracts.
4. Sift the flour mixture over the batter and stir it in by hand, just until no more white flecks appear. Now, blend in the melted butter.
5. Now, wash the mixing bowl and beaters really well. Put the egg whites and cream of tartar into the bowl and beat with the mixer on high until frothy. Gradually add the remaining sugar and continue beating until stiff peaks form.Fold about one-third of the whites into the batter, then the remaining whites. Don't worry if you still see a few white specks, as they'll disappear during baking.
6. Gently spread out the batter over the bottom of the pan, and bake just until set and golden (not wet or sticky), about 10 minutes. Touch the cake gently in the center. If it springs back, it's done. Watch carefully and don't let the top brown. Leave the crust in the pan and place on a wire rack to cool. Leave the oven on while you prepare the batter.

Cheesecake

1. Preheat the oven to 350°F. Generously butter the bottom and sides of a 8-inch springform pan. Wrap the outside with aluminum foil, covering the bottom and extending all the way up the sides. Make and bake the cake crust and leave it in the pan. Keep the oven on.
2. Put one package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl and beat with an electic mixer on low until creamy, about 3 minutes, scraping down the bowl several times. Blend in the remaining cream cheese, one package at a time, scraping down the bowl after each one.
3. Increase the mixer speed to medium and beat in the remaining 1 1/3 cups sugar, then the vanilla. Blend in the eggs, one at a time, beating well after adding each one. Beat in the cream just until completely blended. Be careful not to overmix! Gently spoon the batter over the crust.
4. Place the cake in a large shallow pan containing hot water that comes about 1 inch up the sides of the springform. Bake until the edges are light golden brown and the top is slightly golden tan, about 1 1/4 hours. Remove the cheesecake from the water bath, transfer to a wire rack, and let cool for 2 hours.Then, leave the cake in the pan, cover loosely with plastic wrap, and refrigerate until completely cold, preferably overnight or for at least 4 hours.
5. To serve, release and remove the sides of the springform, leaving the cake on the bottom of the pan. Place on a cake plate. Refrigerate until ready to serve. Slice the cold cake with a sharp straight-edge knife, not a serrated one. Cover any leftover cake and refrigerate or wrap and freeze for up to 1 month.

Cream Puffs

Cream Puff (kak nina)

130 gm Tepung Serbaguna
1/2 sudu teh Garam
100 gm Mentega
2 biji Telur (Gred A)
250 ml Air

Method

1. Mentega, Garam, Air disatukan dalam periuk dan dimasak hingga mendidih.
2. Kemudian, masukkan tepung sedikit demi sedikit dan gaulkan hingga menjadi doh. Kacau cepat2.
3. Kemudian, masukkan adunan tadi ke dalam mixer dan putar hingga sejuk.
4. Masukkan telur satu persatu, teruskan kacau.
5. Adunan tadi diisi ke dalam piping bag dan dipaip menggunakan nozzle star.
6. Bakar selama 30-40 minit pada suhu 170'C sehingga masak (atau sehingga kilat2 pada permukaan puff tadi hilang)

Cream Puff (allrecipes)

90g butter
190ml water
1g salt
100g all purpose flour
3 eggs

Method

1. Preheat oven to 220 degrees celcius (as for my case i had to lower the temperature)
2. In a large pot, bring water and butter to boil. Stir in flour and salt untul the mixture form a ball.
3. Transfer dough to moxing bowl. Beat eggs one at a time. Mix them well.
4. Drop a tablespoonfuls onto ungreased baking sheets.
5. Bake for 20 to 25 minutes.

** lepas beberape kali mencube...baru menjadik respi cream puff kat atas...so cik bawang tenung2 balik...cream puff kat atas nih jadik deflat lepas dikeluarkan dari oven bile cik bawang dok bukak tutup oven dan terus keluarkan die dari oven lepas dah masak..so cik bawang rase..
.jgn lah dibukak tutup pintu oven tuh while baking..dan lepas dah masak..biarkan dlu seketika dalam oven...kalu deflat jugak..nnt kite same2 cube lg sampai die kembang

Roti Canai

roti canai..taken from mamafami's fp...it tastes similar to roti canai i used to eat back at my kampung..really worth trying

Roti Canai Mr Niceghost

3 cups flour
1 - 1.5 cups water
1 tablespoon margarine
salt to taste
2 tablespoons condensed milk
1 tablespoon cooking oil
Extra margarine

Method

1. Mix well water, salt and condensed milk
2. Add the liquid into the flour bit by bit if kneading manually
OR
pour the whole amount into the flour if using machine
3. Add in cooking oil
4. Add in margarine
5. Knead to form a soft dough. Leave it covered with a damp cloth for about 30 minutes.
6. Divide the dough into 10 portion and mould into balls.
7. Coat the balls with margarine so that they won't stick to each other. Leave to rest for not less than 2 hours.
8. Spread (tebar as we say it in Malay) each ball on a smooth surface to form a very thin layer. Fold the four sides into the middle and fry.
9. Enjoy.

Japanese Souffle Cheesecake

Japanese Souffle Cheesecake

200gm cream cheese (Room temperature)
50ml fresh milk
3 eggs (Seperated)
100gm castor sugar
30gm cornstarch
2 tablespoon lemon juice
1/2 teaspn cream of tartar

Method

1. Preheat oven at 175 deg cel. Line 18cm cake tin with grease proof paper.
2. Soften cream cheese in large bowl. Add milk and continue mixing with med speed.
3. Add 1/2 of the castor sugar, egg yolks, cornstarch, lemon juice and cream of tartar, combined together.
4. whisk egg whites in seperate large bowl until stiff peak formed. Add the remaining sugar little by little until mixture stands in stiff peak. ( Petuanya kalau diterbalikkan bowl pun putih telur yg cukup kembang tu takkan tertumpah..cubalah..tapi kalau terkeluar jugak..heh heh heh....kena buat lain la jawabnya..)
5. Fold half of egg whites mixture into cream cheese as gently as possible. Fold the remaining eggs gently but thoroughly.
6. Water bath bake for 45 mins on the lower shelf.
( Pasal masa baking ni mungkin terpulang kepada oven masing2.. )
7. Leave in the tin until cool enough to handle.

Spongy Cake (DrNo)

Ingredients
4 eggs, seperated
1 cup castor sugar
1/3 cup water (or milk)
1 teaspoon vanilla
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt

Method
  • Pre-heat oven to 180deg C (350 deg F).
  • Line baking tray with ungreased parchment paper or greased waxed paper.
  • Beat egg whites till stiff.
  • Beat together egg yolks and sugar till creamy and pale yellow.
  • Beat in water and vanilla.
  • Sift flour, baking powder and salt, then gradually beat into yolk mix.
  • Carefully fold in egg whites till well mixed.
  • Pour into baking tray (spread evenly to edges if making a flat sheet cake).
  • Bake for 12 to 15 minutes (up to 20 minutes if making a thick round cake), or until cake is firm to the touch or toothpick comes out clean.

Bahan B

3 s/b majerin/shorterning
250 ml air
  • Gaul rata semua bahan A sehingga sama rata.
  • Masukkan air dan uli sehingga sebati.
  • Masukkan majerin dan uli lagi sehingga menjadi doh yg lembut [anggaran 10 minit]
  • Bahagikan adunan pada 4 doh besar dan leperkan .
  • Biarkan adunan naik sedikit (lebih kurang 15 minit) dan bakar dalam oven yang telah dipanaskan 180 C selama 10 minit.
  • Keluarkan dan taburkan bahan yang disediakan...ikut pilihan yang disukai.
  • Bakar lagi sehingga nampak keju mozzarella cair.

Tried this recipe for several times already. Really nice. It tastes similar to the one sold at pasar malam. Gamba tak clear psl tangkap pakai handphone ajer. Recipe taken from mamafami's. Thanks a lot ma!

Bahan-bahan :

2 cawan tepung naik sendiri
1/2 cawan gula 1 butir telur
1 1/2 cawan air
1/2 sudu kecil baking powder
1/2 sudu kecil pewarna kuning

Bahan taburan :

1 cawan kacang goreng ~ ditumbuk
1 cawan gula halus
1 tin jagung krim

Kaedah penyediaan :

1. Mesinkan telur dan gula (guna blender je)
2. Masukkan air, baking powder dan pewarna kuning. Mesin.
3. Masukkan tepung sedikit-sedikit dan mesin hingga tidak berketul.
4. Panaskan kuali yang disapu dengan sedikit minyak. Masukkan satu senduk adunan. Tutup kuali sebentar.
5. Masukkan bahan tabur. Tutup semula kuali.
6. Bila kulit berwarna keperangan, bolehlah diangkat dan dilipat dua.

Nota : 1. Jika tiada tepung naik sendiri, gantikan dengan tepung gandum dicampur dengan 1/2 sudu kecil soda bikarbonat. 2. Sekiranya menggunakan kuali tak lekat, tidak perlu disapu dengan minyak terlebih dahulu.

Moist Banana Cake

Taken from Mamafami..it was really moist and soft..sold out in just a few minutes..I've baked banana cake using this recipe ever since..Don't misunderstand me...What I mean is, I rarely bake cakes but every time I want to bake banana cakes, everybody keeps requesting for this one and I have no heart to say no. Told you, everybody loves this cake.

Ingredients :

250 g butter
2 cups sugar
4 eggs
1/2 teaspoon salt
1 teaspoon vanilla
4 tablespoons evaporated milk (I used fresh milk)
3 cups mashed banana 2 cups flour (sifted)
1 teaspoon baking soda (soda bicabornate)
1 teaspoon baking powder
Walnut, macadamia nut, pecan (optional)

Method :

1. Beat butter and sugar.
2. Add in eggs, vanilla, milk and salt.
3. Then add banana to the batter.
4. Finally add flour.
5. Bake in a preheated oven at 180 C/ 350 F for about 1 hour. (I baked for 45 minutes)

Chantal New York Cheesecake

The day I made this, was the best day of the year!! I can't believe I made this! I can't even believe it comes out looking perfect, without any defects...FLAWLESS!! haha lebih...my friend totally liked it...He even requested it once more..patience and pratices really paid off

INGREDIENTS(9 serving):

11 graham crackers, crushed (pakai beskut coklat chip)
20 g butter, melted

670 g cream cheese (pakai 600gm...3 peket)
225 g white sugar
135 ml milk
3 eggs
170 g sour cream (pakai yogurt perise original)
10 ml vanilla extract
25 g all-purpose flour
DIRECTIONS
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8 inch springform pan.
  • In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
  • In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
  • Bake in preheated oven for 1 hour(water-bath). Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

*Bile dok putar batter tuh..make sure gune low speed...dan jgn putar lelame...nnt byk udare tercampur dgn batter
*Make sure semua ingredients pada room temperature...so kene keluarkan cream cheese lebih kurang setengah jam sebelum start proses..
*Respi asal 12 serving...tapi cik bawang tukar kepada 9 serving...so gune 8" spring-form pan..kalo tak 9" untuk 12 serving..dan bakarnye lebih kurang 50 minit
*Cik bawang tak bakar terus...tapi gune teknik water-bath ..so die tak crack kat atas...
*kek ni die tak keras bile masak...ade cam lembik2 sket kat tgh..tapi takpe..psl nnt die akan keras bile sejuk
*lepas kek dah masak...ambik satu pisau yang digreased...pastuh lalukan disekeliling kek...cara neh penting sbb cheesecake menyejuk dari bahagian tepi ke tengah...lepas tuh masukkan balik dalam oven yg tertutup dan sejukkan 5~6 jam(cik bawang buat 3 jam lebih)
*lepas tuh baru keluarkan dari spring-form dan hias...cik bawang gune blueberry pie filling

Bahan A

500 tepung roti
1 paket yeast mauripan
2 s/b gula 1 s/k garam
1 biji telur

Bahan B

3 s/b majerin/shorterning
250 ml air
  • Gaul rata semua bahan A sehingga sama rata.
  • Masukkan air dan uli sehingga sebati.
  • Masukkan majerin dan uli lagi sehingga menjadi doh yg lembut [anggaran 10 minit]
  • Bahagikan adunan pada 4 doh besar dan leperkan .
  • Biarkan adunan naik sedikit (lebih kurang 15 minit) dan bakar dalam oven yang telah dipanaskan 180 C selama 10 minit.
  • Keluarkan dan taburkan bahan yang disediakan...ikut pilihan yang disukai.
  • Bakar lagi sehingga nampak keju mozzarella cair.

Speghetti Carbonara

INGREDIENTS

1 tablespoon and 1/4 teaspoon olive oil
2-3/4 shallots, diced
2/3 large onion, cut into thin strips
Shrimps and other seafood
2/3 clove garlic, chopped
305 g fettuccini pasta (cik bawang gune 150 gm)
2 egg yolks
80 ml heavy cream
50 g shredded Parmesan cheese
salt and pepper to taste

DIRECTIONS

  • Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and shrimps, and cook until shrimps is evenly browned. Stir in garlic when shrimps is about half done. Remove from heat.
  • Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
  • In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan.
  • Pour the shrimps mixture over the pasta, then stir in the cream mixture.
  • Season with salt and pepper

Puding Caramel

Bahan2
  • 1 liter susu
  • 200 gm gula(kalo nk manis lagi tambah lagi)
  • 9 bijik telur ayam
  • esen vanila sesudu
  • 100 gm gula untuk buat caramel(cik bawang doublekan..thehehe)
  • air beberapa sudu


Cara2:

  • Pukul telur dengan gula sampai gula dissolved...and then masukkan susu ngn esen vanilla..kacau rata and then tapiskan
  • Jerangkan air panas...sesambil tuh panaskan oven pada suhu 160 degree..sesambil tuh juge susun bekas untuk letak puding ni dalam bekas yang lain (kite gune teknik bain-marie)
  • Bile semua dah ready..bolehlah panaskan gula dengan air sesudu...tunggu sampai gule larut dan tukar kaler jadik kaler caramel...masukkan sesudu besar air dan kaco cecepat..
  • Masukkan caramel dalam bekas puding...dan tuangkan adunan telur ngn susu tadi
  • Bakar selama 30 minit dengan menggunakan teknik water bath@ bain marie.

Baked Macaroni

My first attempt editing pictures using Photoshop...too much saturation I guess..hehe

Ingredients:

Butter
bawang besar(potong dadu)
Daging cincang
Isi ayam(rebus dan carik-carik)
Daun sup,daun bawang(potong halus)
Bawang goreng
Garam
Makaroni(rebus)
telur
susu sejat
shredded cheese
  • Panaskan oven 180 degree celcius.
  • Panaskan butter sehingga cair. Saute bawang besar. Kemudian masukkan daging cincang. Terus menggoreng sehingga semua air daging telah keluar dan daging masak. Masukkan makaroni, isi ayam, garam, daun sup, daun bawang dan bawang goreng. Kacau hingga rata dan tutup api.
  • Pukul telur dan susu sehingga sebati. Masukkan garam secukup rasa.
  • Sediakan baking dish. Letak makaroni, diselang selikan dengan susu+telur tadi. Ulang sehingga habis. Bakar hingga masak.
*I don't have exact measurement for this recipe. I only use my "instinct" haha developed by being my mom's companion whenever she cooked this baked macaroni.

Burger

Bahan-bahan:

Daging cincang(disejat air daging)
Bawang putih(chopped)
Bawang besar(chopped)
Daun bawang
Worchester Sauce
Sedikit oyster sauce
White pepper
Black pepper(jenis yang halus, not grind black pepper)
Garam secukup rase aje

Cara-cara:

Gaul rata semua bahan, dan perapkan 1~2 jam...sebelum digoreng, air daging dibuang dulu, then bulat-bulatkan daging tuh...and then letak dalam kuali yg dah dipanaskan butter, tekan bebola daging sampai jadi bentuk macam daging burger ramly.. :D:D dan bolehla dihidang dengan roti and sayur2 n cheese and pickle, n chili sauce n mayonis...
